Summer Watermelon Champagne Soup
1 medium watermelon
1/4 cup honey
1 cup champagne (use a semi seco)
2 tbsp fresh lemon juice
5 mint sprigs  


Garnish
1/2 cup sour cream
1 tsp honey
micro mint  
 
 
 Method
  1.  Peel watermelon, removing skin leaving only the watermelon meat.
  2.  Blend watermelon in blender until smooth and no longer chunky.
  3. Add honey, champagne, lemon juice and mint sprigs and mix. You might have to adjust taste slightly depending on when in watermelon season you are making this soup. Chill for up to 24 hours.
  4. Mix sour cream and honey. Ladle soup into a chilled bowl and garnish with a dollop of sour cream and top with micro mint.
